This coconut milk chickpea curry remains my favourite despite the innumerable times I’ve made it and then had it for leftovers. It’s so versatile and easy to make. This particular one was made using an assortment of leftover veggies and defrosted frozen chickpeas. It took twenty minutes to prepare and last us three meals. . . . The veggies I used for this were chopped eggplants, zucchini, onions, tomatoes and spinach.
